Piper’s Pizza Sauce

A little goes a long way with this intensely flavored pizza sauce, making it perfect for our U-bake Pizza Dough.

Makes just over 1 cup (plenty for two 12- to 14-inch pies)

3 tablespoons olive oil
1 small white onion, diced (approx. 1 cup)
1 large clove garlic
3 tablespoons tomato paste
1/4 cup red wine
8 ounces tomato sauce
1/2 teaspoon kosher salt
1 tablespoon brown sugar (optional)

  1. Heat olive oil in a medium-sized, heavy bottom sauce pan.

  2. Add diced onions and sauté on medium heat until onions are transparent and soft.

  3. Dice or smash garlic and add to onions.

  4. Cook for another 2-3 minutes, then add tomato paste.

  5. Let mixture begin to brown before scraping the bottom of the pan with a wooden spoon.

  6. Deglaze the pan with red wine and add the tomato sauce.

  7. Turn heat down to low and let sauce simmer until it has reduced by about 25 percent.

  8. Adjust seasoning with kosher salt and brown sugar to taste.
