Como Loaf
- As one of the Northwest's original artisan loaves, Grand Central's Como fueled a bread revolution in Seattle back in 1989. Now a daily staple in many homes and restaurants, Como is our most versatile rustic bread. Perfect either as table bread or sliced for sandwiches, the Como is an Italian-style white with a golden, nutty crust and chewy interior.

Ingredients: Unbleached enriched wheat flour, filtered water, preferment (unbleached enriched wheat flour, filtered water, yeast) salt.


Peasant - We utilize an old-world style levain to create this nutty, earthy loaf. Whole wheat and rye make up 15% of the flour used in the Peasant Loaf. The fine ground rye we use gives this loaf great keeping qualities. Great with Italian style red sauces, or alone with butter and honey.

Ingredients: Unbleached enriched wheat flour, filtered water, whole wheat flour, rye flour, salt, levain. Available in Portland only.


Seeded Pico - The baguette's deep flavor and chewy interior comes from the preferment as well as the sweet, caramelized crust. We roll each baguette in a combination of sesame and poppy seeds with a smattering of fennel seeds. The seeds are toasted as the bread bakes, making this tasty baguette terrific eaten alone or with dips and spreads.

Ingredients: Unbleached enriched wheat flour, filtered water, salt, poppy seeds, sesame seeds, fennel seeds, yeast, cornmeal.

Rustic Baguette - A bit of malt adds a wonderful nutty flavor to this hand-formed baguette. The Rustic Baguette's crisp crust holds up perfectly for fondue and French Dip sandwiches. Slice our baguette to accompany your favorite pasta recipe or scatter crisply toasted slices over a Caesar Salad.

Ingredients: Unbleached enriched wheat flour, filtered water, malt, yeast, salt.



Challah - Challah is the popular Jewish braided bread baked on Fridays for the Sabbath. This rich, honey sweetened loaf is perfect for breakfast.

Ingredients: Unbleached enriched wheat flour, filtered water, whole eggs, egg yolks, sugar, vegetable oil, honey, salt, yeast.


Yukon Gold Potato - Our Potato loaf has the earthy sweetness of roasted Yukon Gold potatoes balanced by a tangy hint of sour. This moist and tender loaf has a thinner, softer crust less typical of our line. This loaf rises naturally with a levain to achieve a chewy texture and rich taste.

Ingredients: Unbleached enriched wheat flour, filtered water, Yukon Gold potatoes, salt, sour starter (unbleached enriched wheat flour, filtered water).


Whole Wheat Loaf - Our Whole Wheat Loaf has a delicate crumb and slightly sweet flavor. We use a finely ground whole-wheat flour to create this lighter loaf, and add just a touch of rich molasses for flavor and color. This loaf is a versatile sandwich bread- working well with roast beef and caramelized onions to peanut butter and jelly.

Ingredients: Whole wheat flour, filtered water, unbleached enriched wheat flour, preferment (unbleached enriched wheat flour, filtered water, yeast), vegetable oil, molasses, malt, salt and yeast. Available in Portland only.



Ciabatta
- Our Ciabatta is a combination of rustic country texture with a subtle buttery taste. It has a moist, porous interior and crisp floury crust. Serve it as a table bread with fragrant olive oil. When sliced lengthwise, the Ciabatta is a delicious base for sandwiches.

Ingredients: Unbleached enriched wheat flour, filtered water, preferment (unbleached enriched wheat flour, filtered water, yeast), salt.


Fresh Herb Focaccia - A moist dense dough brushed with olive oil and sprinkled with fresh, hand-chopped herbs and cracked pepper.

Ingredients: Unbleached enriched wheat flour, filtered water, malt, yeast, salt, olive oil, parsley, scallions, thyme, oregano, sage, pepper.


Calamata Olive - A sourdough studded with Calamata olives and fresh rosemary, this loaf serves as a meal unto itself. With a substantial, golden crust and open, moist interior, this loaf has become our most popular specialty bread. Top slices of the Calamata Olive loaf with Brie for an appetizer or serve it alongside grilled lamb.

Ingredients: Unbleached flour, filtered water, sour starter (unbleached enriched wheat flour, filtered water), Calamata olives, salt, fresh rosemary.


Campagnolo - Dark, moist and mildly sweet, the Campagnolo contains coarse wheat and rye flours combined with an eight-grain cereal. A true country loaf, Grand Central's Campagnolo is the perfect complement to hearty soups and stews or toasted as a wonderful base for butter and jam.

Ingredients: Unbleached enriched wheat flour, filtered water, preferment (unbleached enriched wheat flour, filtered water, yeast), whole wheat flour, rye flour, yellow polenta, barley, wheat flakes, millet, rice bran, wheat germ, flax seed, sunflower seeds, honey, salt.



Sourdough - Grand Central's Sourdough balances a mild sourdough with a substantial crust and an open, moist interior. Slice the Sourdough thickly for toast with a country breakfast or an open-faced fresh crab sandwich. Hollow out the Sourdough and fill with spinach dip for a delicious appetizer.

Rosemary Rosemary Rolls Fresh Rosemary in this flavorful roll makes it a wonderful companion to light soups and salads.

Ingredients: Unbleached enriched wheat flour, filtered water, malt, yeast, salt, fresh rosemary.


Grande Bolo & Chico Bolo Rolls - Using our famous Como dough, our uniquely square-shaped Grande Bolo rolls will elevate your good sandwich or burger to greatness. Our Chico Bolo rolls are a rounded, smaller version of the same great taste.
