Toasted Grand Central bread topped with seasonal ingredients makes a delicious, simple meal.

Makes 1 tartine

A tartine is an open-faced sandwich that’s delicious any time of day. Start with a slice of Grand Central bread, add lemony arugula and a delicious fried farm egg, and you have one of our favorite fast meals.

1 slice Grand Central bread (Peasant or Multigrain are good whole-grain choices)
¼ cup fresh ricotta
1 handful arugula
1 tablespoon Lemon Vinaigrette, or to taste
1 egg, fried over easy (we use local pastured eggs)
Red chile flakes
Fruity extra-virgin olive oil

Toast bread and spread with ricotta. In a small bowl, toss arugula leaves with vinaigrette. Top ricotta with arugula and fried egg. Garnish with chile flakes and a drizzle of olive oil.

Lemon Vinaigrette
3 tablespoons fresh lemon juice
½ teaspoon lemon zest
1 tablespoon minced shallot
2 teaspoons Dijon mustard
2 teaspoons honey
½ teaspoon sugar
1/3 cup good-quality extra virgin olive oil

Combine lemon juice and zest, shallot, mustard, honey and sugar in a jar. Season with salt and pepper to taste. Add half of olive oil, cover and shake well, then add remaining oil and shake until combined.
