HOW TO STORE AND REHEAT Pastries, bread, and rolls
PUMPKIN AND PECAN PIES
We recommend storing Pumpkin and Pecan pies at room temperature for same-day use. For overnight storage, refrigerate pies in the box they came in.
Reheat in 300 degree oven for 15 minutes. Let rest for 30 minutes before serving. Don’t forget the whipped cream!
FRUIT PIES
Fruit pies (fully baked) may be stored at room temperature for several days.
Reheat in 325-degree oven for approximately 15-20 minutes right before serving.
HOW TO STORE AND REfresh PASTRIES
Refreshing and reheating Grand Central pastries
Refresh Grand Central pastries on a baking sheet in a preheated 350-degree oven for approximately 5-10 minutes. We do not recommend you refresh any pastry that is topped with vanilla cream, such as Danish and Brioche Cinnamon Rolls.
Same day or next day storage
Sweet pastries are best stored overnight at room temperature in the box or bag you received them in. If additional storage time is needed, pastries may be stored in an airtight container for two days. Moist air inside a refrigerator will affect the texture of the pastry. Savory pastries (quiche, twice baked ham and cheese croissants) should be refrigerated if you are not eating them the same day.
Longer storage - use the freezer!
Grand Central cookies, croissants, chocolate croissants and even scones freeze well in an airtight freezer bag, and they’re great to have on hand for emergencies! Allow frozen pastries to come to room temperature and refresh in the oven as needed.
HOW TO STORE AND REFRESH TABLE BREAD
Artisan loaves should be served within 1-2 days of bake. As a rule, “white” loaves like Baguettes and Como will dry out more quickly than hearty loaves containing whole grains.
Loaves should be stored overnight in the paper bag they came at cool, dry room temperature. Refrigeration does not improve overall shelf life. For extended storage, immediate freezing is best.
How to freeze bread for longer storage
Place bread into a plastic bag and date the package for food rotation. Loaves may be stored for up to 2 weeks in freezer. For optimal results, product may be double bagged.
Thawing & refreshing unsliced bread
Thaw frozen loaves at room temperature for 1-2 hours. Leave product bagged and sealed while thawing.
For a fast thaw, remove loaves from bag, wrap in foil and place in 325°F oven for 15 to 20 minutes.
To refresh any unsliced loaf, first sprinkle liberally with water, then place in 400°F oven for 5 to 7 minutes. This will improve the crumb and character of the interior.
HOW TO STORE AND REFRESH ROLLS
Store in original packaging at cool room temperature for up to 3 days. Avoid storing plastic bagged product in hot spots in the kitchen. For longer storage, seal in plastic bags, date and freeze. For optimal results, product may be double bagged. Use within two weeks for best quality.
Thaw sliced bread, buns and dinner rolls at room temperature for 1-2 hours. Leave product bagged and sealed while thawing. Once thawed, store at room temperature for up to three days.
Refreshing buns and sliced bread
Buns and sliced bread benefit from grilling or toasting before serving.
Refreshing dinner rolls
Sprinkle liberally with water, then place rolls on a sheet pan in preheated 400-degree oven for 5 to 7 minutes.
